- 2 small onions
- 20 grams butter
- 100 grams Cheese (such as mountain cheese, Appenzeller, Gruyere, Sbrinz)
- 150 grams stale white bread
- 2 eggs
- 100 milliliters milk
- 1 Tbsp Pastry flour
- 1 Tbsp finely chopped marjoram
- salt
- freshly ground peppers
- 1 l vegetable stock
Preparation steps

Finely chop onion and sauté in butter. Cut cheese into small cubes. Cut crusts off bread, cut bread into small cubes and mix with onions and cheese. Beat eggs with milk, stir in marjoram, pour over bread mixture and season with salt and pepper. Add flour to bread mixture, knead until mixture holds together and let rest for about 30 minutes.

Bring a large pot of salted water to a boil. With wet hands, form bread mixture into dumplings. Boil dumplings until they rise to the surface, 5-10 minutes. Lift dumplings from water with a slotted spoon and drain well.

Heat vegetable stock and season to taste with salt and pepper. Arrange dumplings in the stock and garnish with marjoram to serve.
