Ingredients

For the dumplings
800 grams stale White roll
400 milliliters milk
2 shallots
2 Tbsps butter
2 Tbsps freshly chopped parsley
4 eggs
salt
freshly ground peppers
Nutmeg
1 Tbsp butter (for the cloth)
For the gratin
butter (for greasing)
50 grams freshly grated Mountain cheese
50 grams freshly grated Feta
50 grams freshly grated Blue cheese

Preparation steps

For the dumplings: Slice bread. Boil milk and pour over bread, let sit for about 10 minutes. Peel and mince shallot. Heat butter in a pan and cook shallot. Remove from heat, add parsley, egg and soaked bread. The resulting dough should easy to shape and not be too moist. Season with salt, pepper and nutmeg.

Grease a wet linen or tea towel with butter and put the dough on the towel. Shape into a roll and wrap firmly in the towel. Tie ends with yarn. Cook in boiling salted water for about 30 minutes.

Preheat the oven to 200°C (approximately 390°F).

Remove dumplings from water, let rest briefly and remove cloth. Slice dumplings and place into a buttered baking dish. Mix cheeses, sprinkle on top of dumplings and bake until browned.

Remove from oven and serve, as desired, with fresh green salad.
