- 200 grams Dark chocolate (70% cocoa)
- 120 grams Milk chocolate (30% cocoa)
- 100 grams butter
- 2 tsps Crème fraiche
- 100 grams Pecan
- 3 eggs
- 200 grams brown sugar
- ½ tsp salt
- 180 grams Pastry flour
- 10 grams Baking powder
- powdered sugar (for dusting)
Preparation steps
Coarsely chop both dark and milk chocolate and melt with butter in a bowl over a hot water bath. Stir in creme fraiche.
Preheat the oven to 180°C (approximately 350°F). Line a deep baking sheet with parchment paper.
Coarsely chop nuts. Mix eggs with sugar and salt in a bowl until light and creamy and until sugar has dissolved. Gradually add cooled chocolate to egg mixture while stirring. Mix flour with nuts and baking powder. Add flour mixture to egg mixture and stir. Pour batter into the prepared baking dish and smooth. Bake brownies in the preheated oven for 30-35 minutes. The brownies will still be a little soft in the middle, so a toothpick may may even stick a little if pressed into cooked brownies for testing.
Cool brownies, cut into about 5x6 cm (approximately 2x2 inch) pieces and serve dusted with powdered sugar.
