Preparation steps

1.

Rinse and coarsely chop the chile peppers. Finely crush the chile peppers and the salt in a mortar. Pour the vinegar, sugar and 100 ml (approximately 1/2 cup) of water in a small pot. Let simmer until thick. Peel and finely chop the garlic. Saute in 1 tablespoon of oil until translucent. Stir the garlic and chile mixture into the sauce. Pour through a sieve and let cool.

2.

Rinse the lettuce and shake dry. Rinse the scallions and cut into thin rings. Season the ground meat with salt, pepper and orange zest. Form 4 burger patties from the meat. Cook the burgers in 3-4 tablespoons of oil for 4 minutes on each side.

3.

Saute the pineapple in the remaining oil for 2-3 minutes on each side.

4.

Halve the burger buns. Layer the lettuce, scallions, burger patties, pineapple and sauce on the bottom bun. Lightly press the remaining bun on top. Serve immediately.
