- ½ cup unsalted butter
- ½ cup caster sugar (plus extra for sprinkling)
- 1 egg (separated)
- 1 ¾ cups all-purpose flour
- 1 tsp Mixed spice
- 2 Tbsps milk
- ½ cup Currants
Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line 2 baking trays with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until soft and creamy, then beat in the egg yolk.
3.
Sift in the flour and spice, then add the milk a little at a time until the mixture forms a soft dough. Knead in the currants.

Turn out and knead lightly on a lightly floured surface. Roll out to 0.5cm|1/4" thickness and cut into rounds.

Place the biscuits on the baking tray and bake for 10 minutes.
6.
Lightly beat the egg white until just frothy and brush over the part-baked biscuits, then sprinkle lightly with caster sugar.
7.
Return to the oven for a further 10 minutes until pale golden. Remove from the oven and allow the biscuits to stand for 5 minutes before lifting onto a wire rack to become cool and crisp.
