- 1 ⅛ cups soft butter
- ½ cup sugar
- 1 ⅔ cups all-purpose flour
- ¾ cup Rice flour
- ¾ cup dried Cranberry
- all-purpose flour (for the work surface)
Preparation steps
1.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and line a baking tray with greaseproof paper.
2.
Beat together the butter and sugar together until creamy then sieve in the flour and rice flour and knead quickly into a smooth pastry.
3.
Knead in the cranberries then wrap the pastry in cling film and chill for around 30 minutes.

Roll out the pastry on a floured work surface approx. 1 cm thick and cut out star shapes. Place on the prepared baking tray and bake for 10-15 minutes until golden. Remove from the oven and transfer to a wire rack to cool.
