3 egg whites
1 pinch salt
300 grams sugar
450 grams ground almonds
2 tsps cinnamon
¼ tsp Ground clove
1 Tbsp Red currant jelly

Preparation steps

Beat the egg whites with the salt until stiff. Gradually sprinkle in the sugar, beating constantly.

Set aside 5 tablespoons of the egg white mixture and chill. Mix the almonds, spices and jelly into the remaining egg white mixture. Knead into a smooth dough and roll out between two layers of plastic wrap until about 1/2 cm thick. Use a cookie cutter to cut out stars. Place the stars on a lined baking sheet and evenly coat with the chilled egg white mixture.

Bake for about 15 minutes at 150°C (approximately 300°F). Remove from the oven, let cool and serve.
