- 4 eggs (size M)
- 4 Tbsps sugar
- 1 pinch salt
- milk
- 150 grams Pastry flour
- 50 grams raisins
- 60 grams clarified butter (for frying)
- 40 grams butter
- powdered sugar (for dusting)
Preparation steps
1.
Separate the egg whites and yolks. Beat the egg whites until stiff.
Beat the egg yolks with sugar and salt until fluffy. Stir in the milk and flour, and mix well to form a smooth batter. Fold in the beaten egg whites and the raisins.

Heat 15 grams (1 tablespoon) butter in a nonstick pan, pour ¼th of the batter and fry until golden brown over moderate heat. Flip the pancake and fry on other side until golden.
3.
Break the pancake in pieces with a spatula and add ¼th of the butter. Toss the pancake pieces briefly with butter and transfer to a plate. Cook 3 more pancakes the same way. Serve dusted with powdered sugar.
