- 2 Chicken breasts (a total of 500 grams)
- 1 Tbsp clarified butter
- 3 Romaine Lettuce
- 4 slices Toast
- 2 Tbsps Garlic butter
- 1 Tbsp olive oil
- For the dressing
- 1 minced garlic clove
- 1 tsp lemon juice
- ¼ tsp hot Mustard
- 1 egg
- 125 milliliters olive oil
- salt
- freshly ground peppers
- 1 pinch sugar
- 25 grams grated Parmesan
- 1 tsp Anchovy paste
- For the garnish
- 50 grams Parmesan (straight)
Preparation steps

For the salad, melt butter in a pan and fry chicken breasts for 7-10 minutes. Rinse lettuce, trim, shake dry and tear into bite-sized pieces.

Cut bread into cubes. Melt butter with oil in a pan, add bread cubes and toast until crispy.

For the dressing, combine all ingredients in a blender and puree until a creamy dressing is formed and season to taste. If needed add a little water to reach desired consistency.

Pour the salad and the dressing in a large bowl and mix well. Spread over 4 bowls, cut chicken breasts into slices and arrange over each salad. Just before serving, garnish with grated Parmesan and season with pepper.
