The sponge mixture is prepared with rapeseed oil instead of butter: This is purely vegetable, has a fatty acid profile that is super favourable for our body, and lots of natural vitamin E. Because apple sauce is stirred in, less fat is needed - so we save calories when eating cake!
To make a marble cake, fill one half of the dough into the cake tin and mix the other with 1 heaped tablespoon of cocoa powder and 4-5 tablespoons of milk. Then pour the dark dough onto the light one and pull a fork through both doughs to create the typical pattern.

- ½ cup Canola oil
- 4 ozs sugar
- 7 ozs apple sauce (sugar free)
- 2 Tbsps Soy flour (about 30 grams)
- 11 ozs Spelt flour
- ½ pinch Baking powder
- ½ cup Buttermilk

Preparation steps
Combine eggs, oil, sugar, applesauce, and soy flour in a mixing bowl.
Whisk the ingredients with a hand mixer until the sugar has dissolved.
Mix spelt flour and baking powder in another bowl and sift into applesauce mixture.
Pour in buttermilk and mix into a smooth batter. If it is too liquid, stir in 1-2 tablespoons of additional flour. Use the dough according to the recipe or simply stir in nuts, dried fruit (such as raisins, cranberries, chopped apricots) or chocolate chips.
