0.333 cup softened butter
cup superfine caster sugar
4 Peaches (halved, pits discarded)
7 ozs Puff pastry

Preparation steps

Heat the oven to 200°C / 400°F.

Spread 2 ounces of butter thickly over the tart tin. Sprinkle over a thick layer of sugar (approx. 3 oz) and arrange the peaches on top, cut sides facing downwards.

Heat the tin on a burner over moderate heat for around 10 minutes. Take off the heat when the sugar begins to caramelize. Cool briefly, then sprinkle over the rest of the sugar and dot the rest of the butter over the top.

Roll out the pastry and cut to slightly larger than the tart tin. Lay this over the peaches, pressing down into the tin at the edges. Bake for approx. 30 minutes.

Take out of the oven and cool slightly, then turn out carefully. Serve warm or cold.
