Ingredients
- For the pastry
- 7 ozs Pastry flour
- 2 ozs sugar
- 1 pinch salt
- 1 egg
- 4 ozs butter
- butter (for the baking pan)
- Pastry flour (for work surface)
- For the topping
- 5 Apple (such as Pink Lady, Braeburn, Jonathan)
- 2 Tbsps lemon juice
- 14 ozs Greek yogurt
- 1 egg yolk
- 3 Tbsps powdered sugar
- 5 Tbsps Cider
- 1 Tbsp cornstarch
- 2 Tbsps slivered almonds
Preparation steps
For the pastry: mix flour with sugar and salt. Pile on the work surface and make a well in the center. Add egg to the well. Cut butter into small pieces and arrange around the well. With your hands, quickly knead into smooth pastry and shape into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 350°F.
Rinse and dry apples, quarter and core and cut into slices. Drizzle with lemon juice. Whisk yogurt with egg yolks, powdered sugar, cider, and cornstarch.
Butter tart pan. Roll our pastry and line pan with it, making an edge all around. Spread with yogurt mixture. Arrange apple slices on top and sprinkle with almonds. Bake in a preheated oven at 350°F for about 40 minutes or until golden brown. Remove from the oven and cool.
Serve with whipped cream, if desired.
