- 7 ozs Red lentils
- ⅜ cup milk
- 2 eggs
- 1 cup gluten-free self-rising flour (scant)
- 2 carrots (coarsely grated and drained)
- 1 Tbsp chopped cilantro
- salt
- peppers
- 4 Tbsps olive oil
Preparation steps

Place the lentils in a pan and cover generously with water. Bring to a boil. Reduce the heat and simmer uncovered for 20-25 minutes, until tender. Drain well.

Tip into a bowl and crush lightly.

Whisk together the milk and eggs, then gradually whisk in the flour until smooth.
4.
Stir in the lentils, carrots, coriander and salt and pepper to taste.
5.
Heat the oil in a frying pan and cook large spoonfuls of the mixture in batches, for 2-3 minutes on each side until crisp and golden. Drain on absorbent kitchen paper.
