Preparation steps

Peel onion and carrots, cut into small cubes and fry in a pot with 1 tablespoon butter. Stir in flour, add broth and simmer for about 20 minutes over medium heat. Puree with an immersion blender and season with salt, pepper and nutmeg. Rinse the lentils under running water, drain and cook in a pot of boiling salted water until soft, 10-15 minutes.

Cut the hot dogs into thin slices and add to soup along with the well-drained lentils. Heat briefly until warmed, season the soup again and serve in soup bowls.
