Preparation steps

Rinse and trim the carrots, leaving some of the stems intact. Gently remove the delicate skin from the carrots. Peel and quarter the shallots. Peel and halve the garlic.

Melt the butter in a pan. Add the carrots, shallots, and garlic. Sauté briefly, then sprinkle with the sugar. Add 100 ml (approximately 3 ounces) of water, and caramelize lightly, stirring constantly. Season to taste with salt, pepper, and caraway seed.

Simmer over medium heat, stirring occasionally until the liquid has evaporated and the carrots are glazed. Garnish with the cilantro and serve.
