3 Tbsps White vinegar
100 milliliters warm Vegetable broth
¼ tsp sugar
freshly ground peppers
2 Tbsps small Caper (canned)
4 Tbsps olive oil
2 Tbsps freshly chopped parsley
Basil (for garnish)

Preparation steps

Rinse the cauliflower florets clean and boil in salted water for about 10 minutes. Then strain and drain. Peel garlic and chop finely. Rinse the tomatoes, quarter, core and dice finely. For the vinaigrette, combine the vinegar, broth and sugar, season with salt and pepper.

Toss the salad ingredients with vinaigrette, season to taste and leave for 20 minutes. Mix in the capers, the oil and the parsley, season again and serve in bowls. Serve garnished with basil.
