Preparation steps

1.

Cook the lentils in double the amount of boiling water with half of the cumin for about 20 minutes over a low heat.

2.

In the meantime, clean and wash the cauliflower, cut it into 1/2" thick slices and place them on a baking tray lined with baking paper. Mix 2 tablespoons of oil with paprika powder, turmeric powder, salt, and pepper and drizzle over the cauliflower slices. Bake in a preheated oven at 400°F for 15-20 minutes.

3.

Wash and halve the plums, remove stones and cut the fruit into slices. Peel and halve onion and cut into strips. Heat the remaining oil in a pan. Sauté the onion strips and plum wedges in it at medium heat for about 5 minutes. Deglaze with soy sauce, add 2-3 tablespoons of water and simmer for 2 minutes. Season the sauce with salt, pepper and thyme.

4.

Season lentils with the remaining cumin, salt and pepper. Remove the cauliflower steaks from the oven and divide them into 4 plates. Add the lentils and sprinkle everything with the plum sauce and sprinkle with poppy seeds.
