Celeriac shines with various essential oils that have a positive effect on the body. They make the tuber vegetable digestible, stimulate the metabolism and gently drain the body. Together with the bitter substances, which also stimulate digestion, they can also soothe an upset stomach. Walnut oil provides us with the important omega-3 fatty acids that keep our blood vessels supple.
For a particularly fine salad, the celery can also be sliced into strips and not just cut into sticks. If you would like to enjoy your salad vegan, the yoghurt can also be replaced by a vegetable alternative, for example on soya basis.

- 5 Tbsps Yogurt (low-fat)
- 2 Tbsps Walnut oil
- 1 Tbsp lemon juice
- 1 Tbsp Brandy vinegar
- 1 tsp coarse-grained Mustard
- salt

- 600 grams Celery root
- 2 tart Apple
- 2 stalks parsley
Preparation steps
Mix the yogurt, walnut oil, lemon juice, brandy vinegar and mustard and season with salt and pepper.
Peel the celery root and cut into thin sticks. Blanch in boiling salted water, drain in a colander, rinse with cold water and drain well.
Peel the apples, cut into quarters, remove the core and coarsely grate.
Rinse the parsley, shake dry and pluck off the leaves. Finely chop the parsley and mix with grated apple, celery root and yogurt dressing. Season the salad to taste with salt and pepper and serve in bowls.
