3 large onions (peeled and sliced)
salt (to taste)
freshly ground Black pepper (to taste)
8 slices Bread (thickly sliced)
¼ cup butter (at room temperature)
8 slices aged Cheddar cheese

Preparation steps

Heat the oil in a large skillet set over medium heat. Saute the onions until soft and caramelized, about 25 minutes. Season to taste with salt and pepper. Using a slotted spoon, transfer the onions to a bowl or plate.

Generously butter both sides of each bread slice. In between two bread slices, layer the caramelized onions between two to three slices of cheese.

Heat a large griddle or skillet over medium-low heat. Grill the sandwiches, turning once, until the cheese is melted and the bread is a nice golden brown, about 2 to 3 minutes per side.
4.
Cut each sandwich in half and serve.
