125 grams Buckwheat flour
2 pinches salt
2 eggs
2 Mozzarella (125 grams or 4.5 ounces)
125 milliliters Cider
4 Tbsps butter (for cooking)
100 grams finely grated Gruyere
8 slices cooked ham

Preparation steps

1.

Combine flour, salt and eggs in a large bowl. Gradually add about 180 ml (approximately 6 ounces) of water with an electric mixer. Beat until creamy, then chill for about 3 hours.

Slice mozzarella.

Preheat the oven to 120°C (approximately 250°F). Line a baking sheet with parchment paper.

Stir cider into dough. Heat butter in a pan and cook dough to form 8 thin crepes. Remove and top with mozzarella, gruyere and ham. Fold over and place on the baking sheet. Bake for about 10 minutes, until cheese melts.

5.

Remove and plate crepes, 2 per serving. Serve sprinkled with remaining cheese.
