Nutritional values
Chicken eggs are rich in vitamin A, which improves our vision and gives us an even and healthy complexion. Allicin from spring onions, which is a secondary plant substance, can make germs in the mouth harmless and helps, for example, against inflammation of the gums and periodontosis.
Enjoy a crisp green salad with it - it's additionally filling and brings freshness. If needed you can substitute Leeks for the onions.

Ingredients
Preparation steps
Peel and finely dice onions. Clean and wash the spring onions and cut into fine rings; set some aside for garnish.
Heat oil in a small frying pan. Sauté diced onion and scallions in it for 3 minutes over medium heat. Divide half of the mixture between 2 pans.
Crack eggs into a bowl and season with salt and pepper. Finely grate the cheese and mix into the egg mixture.
Add 1 tsp butter to each of the pans and heat. Divide 1⁄4 of the egg mixture among the pans and allow to set over medium heat for 4-5 minutes. Fold omelets in half with a spatula and keep warm in preheated oven at 80 °C / 175 ˚F.
Continue making 2 more omelets with the remaining ingredients. Slide omelets onto plates and serve garnished with remaining scallions.
