2 red onions
1 bunch thin scallions (or Spring onion)
1 Tbsp olive oil
8 eggs
salt
peppers
5 ozs Fontina or Mountain cheese (in one piece )
¾ oz butter (4 tsp)

Preparation steps

1.

Peel and finely dice onions. Clean and wash the spring onions and cut into fine rings; set some aside for garnish.

Heat oil in a small frying pan. Sauté diced onion and scallions in it for 3 minutes over medium heat. Divide half of the mixture between 2 pans.

Crack eggs into a bowl and season with salt and pepper. Finely grate the cheese and mix into the egg mixture.

Add 1 tsp butter to each of the pans and heat. Divide 1⁄4 of the egg mixture among the pans and allow to set over medium heat for 4-5 minutes. Fold omelets in half with a spatula and keep warm in preheated oven at 80 °C / 175 ˚F.

5.

Continue making 2 more omelets with the remaining ingredients. Slide omelets onto plates and serve garnished with remaining scallions.
