150 grams freshly grated Cheese (such as Emmentaler, Gruyère)

2 Tbsps Pastry flour

Preparation steps

Grease the ramekins with butter and sprinkle with breadcrumbs. Preheat the oven to 200°C (appoximately 400°F).

Separate the eggs. Cream the butter with the egg yolks, basil and nutmeg until fluffy. Then add the grated cheese, cream and crème fraîche, stirring between each addition. Stiffly beat the egg whites and add the flour. Season with a pinch of salt. Pour the mixture into the ramekins. Bake 15-20 minutes or until golden brown. Serve immediately.
