500 grams Pastry flour
4 eggs
1 tsp salt

4 Tbsps butter
200 grams Emmentaler cheese (grated)
2 onions

Preparation steps

1.

For the cheesy noodles: Bring wide pot of salted water to boil.

Preheat oven to 150°C (approximately 300°F) and grease casserole dish.

Put flour and eggs in bowl, add spices and slowly stir in water. Beat dough vigorously until it's viscous and easily pulled. (Use less water if using large eggs.)

Spread small amount of dough evenly on wet wooden board, cut into very fine noodles using long knife or metal dough scraper and add noodles to boiling water. Plunge knife or dough scraper in cold water occasionally to prevent dough from sticking.

It is important to keep water boiling at all times. After about 3 minutes of cooking, noodles are finished and will float to surface. Use skimmer to remove finished noodles from water and drain in colander.

Melt butter in large skillet and swivel noodles through butter. Fill baking dish with alternating layers of noodles and grated cheese.

7.

Cover cheesy noodles and briefly cook in hot oven until cheese melts.

8.

Meanwhile heat some butter in wide frying pan. Peel onions and cut into thin rings. Fry onion rings in hot lard until golden brown, add a little salt and mix with cheesey noodles. Garnish with chives and serve.
