- 400 grams Pastry flour
- 4 eggs
- 1 pinch freshly ground Nutmeg
- 100 milliliters milk
- salt
- 200 grams Emmentaler cheese
- 2 Tbsps melted butter
- 2 onions
- 2 Tbsps clarified butter
- 2 Tbsps scallions
Preparation steps
Combine flour, eggs, nutmeg, milk and salt in a bowl and mix until smooth. Add 100-150 ml (approximately 1/2 cup) of water until the dough hard falls from a spoon.
Let rest for 30 minutes.
Bring a large pot of salted water to boil.
Meanwhile, finely grate cheese.
Add more water to dough if needed. Slice dough into small pieces, then cook in boiling salted water. The noodles are ready when they float to the surface.
Preheat the oven to 100°C (approximately 220°F).
Remove noodles from the water with a slotted spoon. Place in an ice water bath and drain. Heat butter in a pan and add drained noodles.
In a baking pan, layer noodles and cheese until all are in the pan. Bake until cheese melts.
Peel onion and slice into thin rings. Heat butter in a pan and fry onions until golden brown.
Remove casserole from the oven and sprinkle with chopped chives. Serve with onions.
