- 50 grams butter
- 1 pinch salt

- 175 grams Pastry flour
- 3 medium eggs
- 1 generous pinch Baking powder
- 150 grams grated Emmentaler cheese
- 50 grams grated Parmesan
- fresh Pineapple
- 100 grams slivered almonds
- Frying oil
- Chives (for garnish)
Preparation steps
Combine the water, butter and a pinch of salt, pepper and nutmeg in a saucepan and bring to a boil. Stir in the flour and mix until a thin, white film forms on the bottom of the pan. Remove from heat, transfer to a bowl and stir in the eggs, one at a time, until a shiny dough is formed. Stir in the baking powder and grated cheeses and mix well. Cut the pineapple in half lengthwise, scoop out the flesh and cut into bite-sized pieces.
Scoop a walnut-sized piece of dough and wrap it around a piece of pineapple. Pinch to close the dough and roll into a ball. Roll the balls in the almond slivers. Heat the frying oil to 175°C (approximately 350°F) and carefully drop the dough balls into the hot oil. Fry until golden brown, remove with a slotted spoon and drain on paper towels. Serve the fritters in one half of the hollowed out pineapple and garnish with chives.
