1 lemon
600 grams Quark
200 grams Sour cream
100 grams Yogurt (low-fat)
2 packets vanilla pudding mix
400 grams Sour cherry

Preparation steps

 Separate 2 eggs ( reserve egg whites for another use). Combine  flour, egg yolks, butter, cream, 1 pinch of salt, 150 grams (approximately 5 ounces) of sugar, cocoa powder and baking powder. Process with dough attachment of a hand mixer until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

Separate remaining eggs. Rinse lemon in hot water and grate zest. Combine egg yolks with quark, remaining sugar, sour cream, yogurt, lemon zest and pudding, mix until smooth.

Beat egg whites with 1 pinch of salt until stiff, fold into quark mixture. Rinse and pit cherries.

Cover baking sheet (20 x 30 cm) (approximately 8 x 12 inches) with baking paper. Roll out 2/3 of dough  to be the same size as baking sheet and place into baking sheet. Top with quark mixture and smooth. Tear remaining dough into pieces and spread, together with cherries, onto quark mixture. Bake in preheated oven at 200°C (fan oven 180°C; gas mark 3) (approximately 400°F) for about 45-50 minutes. Remove from oven and cool. Cut into slices and serve.
