Cherry Glazed Chocolate-Cherry Muffins
Ingredients
- For the muffins
- 200 grams Sour cherry (jarred)
- 100 grams Chocolate
- 100 grams butter
- 3 eggs
- 80 grams powdered sugar
- 30 grams instant Cappuccino powder
- 150 grams Pastry flour
- 2 tsps Baking powder
- ½ tsp baking soda
- 200 grams softened cream cheese
- 1 tsp finely grated Orange peel
- 4 Tbsps Orange juice
- 1 Muffin tin
- 12 Baking cups

- Pastry flour
- For the glaze
- 2 Tbsps Cabbage
- 100 grams powdered sugar
Preparation steps
Coarsely chop the chocolate and melt with the butter over low heat.
Beat 2 of the eggs with 50 g (approximately 1/4 cup) of powdered sugar and the cappuccino powder until light and fluffy.
Stir 100 g (approximately 1 cup) of flour, the baking powder and baking soda into the egg mixture, then stir in the chocolate-butter mixture. Mix until smooth.
Beat the cream cheese, orange zest and orange juice until smooth. Add the remaining egg, flour and powdered sugar and mix until smooth.
Drain the sour cherries.
Line the wells of a muffin tin with paper baking cups.
Evenly divide half of the chocolate mixture into the muffin tin and top with half of the sour cherries. Spoon a dollop of the cream cheese mixture into each well, top with the remaining chocolate mixture and sour cherries. Bake for 20-25 minutes, until golden brown. Remove from the oven, allow to cool for 5 minutes, remove from the muffin tin and cool completely on a wire rack.
For the glaze: Whisk together the cherry juice and powdered sugar until smooth. Spoon over the cooled muffin and allow to dry.
