- For the cupcakes
- ½ cup cocoa powder
- ¾ cup boiling water
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 pinch salt
- ½ tsp baking soda
- 1 cup superfine caster sugar
- ¾ cup unsalted butter
- For the topping
- 4 Tbsps unsalted butter
- 1 cup cream cheese
- 1 tsp vanilla extract
- 4 cups powdered sugar
- To decorate
- chocolate sprinkle
Preparation steps
1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place 12-15 paper cases in a muffin tin.

Whisk together the cocoa and boiling water until smooth. Set aside to cool.

Whisk the eggs and vanilla into the cocoa mixture until blended.

Sift the flour, salt and bicarbonate of soda into a mixing bowl. Stir in the sugar.

Beat in 1/3 of the cocoa liquid and the butter until well mixed. Gradually whisk in the remaining cocoa mixture until smooth.

Spoon into the paper cases and bake for about 20 minutes until springy to the touch. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
7.
For the topping: beat the butter and cream cheese until creamy, then add the vanilla.
8.
Gradually sift in the icing sugar beating constantly until smooth. Chill for 2 hours.
9.
Spread the topping on the cakes and sprinkle with sugar strands.
