- Ingredients
- 2 Tbsps olive oil
- 4 skinless Chicken breasts
- 2 Turnip (peeled and sliced)
- 4 cups Swiss Chard leaf
- 3 cups chicken stock
- 6 scallions (chopped)
- 1 Tbsp black Sesame seeds
- 1 flat-leaf parsley (roughly chopped)
- salt
- peppers
Product recommendation
Suggested variation 1; replace the chopped parsley with the same amount of tarragon. Suggested variation 2; use sesame oil instead of the olive oil and replace 55 ml / 2 fl. oz / 1/4 cup of the chicken stock with light soy sauce. Replace the Swiss chard with the same weight of bok choi.
Preparation steps
1.
Heat the olive oil in a large casserole dish set over a moderate heat until hot.
2.
Season the chicken breasts and seal in the hot oil until golden brown in colour all over. Remove from the dish and transfer to a slow cooker.
3.
Reduce the heat under the casserole dish a little before adding the turnip and spring onion. Cook for 5 minutes, stirring occasionally before adding the stock. Stir well and pour into the slow cooker.
4.
Cover and cook on a medium setting for 4 hours.
5.
Add the Swiss chard to the slow cooker after 4 hours and let it wilt for 5-10 minutes. Once wilted, remove 4 large wilted leaves and a chicken breast.
6.
Adjust the seasoning of the broth and stir through the sesame seeds and parsley.
7.
Finely chop the removed chicken breasts and spoon into the Swiss chard leaves.
8.
Pour the contents of the slow cooker into a casserole dish and replace the Swiss chard leaves with the chicken before serving.
