- ¼ cup butter
- 1 Tbsp flour (seasoned)
- 1 chicken (jointed)
- 1 onion (peeled and sliced)
- 2 cloves garlic cloves (whole and lightly flattened)
- 0.333 cup dried Apricot
- 2 sprigs rosemary
- ⅞ cup white wine

Preparation steps

Preheat the oven to 170°C (150 fan) | 325°F | gas 3

Heat the butter in a casserole. Dust the chicken joints with seasoned flour and brown in batches in the butter over a medium heat then transfer to a plate.

Add the onion and garlic and cook gently until golden, then add the chicken back to the pan. Add the wine, apricots, rosemary and seasoning, bubble up, cover with a lid and cook in the oven for 1 hour until the chicken is cooked through. Serve with creamy mashed potato.
