Chicken Bacon Wraps

For the vegetarian version of these wraps, bacon and chicken can be replaced with sliced Parmesan cheese and grated carrots or oven-cooked eggplant slices.

- 7 ozs plain Yogurt
- 3 Tbsps Mayonnaise
- 1 Tbsp lemon juice
- salt
- freshly ground peppers
- 6 Lettuce
- 8 slices Bacon
- 10 ozs Chicken breasts
- 4 Tortillas (9 inch diameter)
Preparation steps
Mix together yogurt, mayonnaise and lemon juice and season with salt and pepper. Rinse lettuce, spin dry and tear into bite-sized pieces. Cut the bacon into strips and cook in an ungreased pan until crispy. Remove and set aside.
Rinse chicken breasts, pat dry, cut into strips, season with salt and pepper and fry until golden brown in the same pan used to cook the bacon.
Heat tortilla in another frying pan, about 1 minute per side. Divide lettuce, chicken and bacon into fourths. Place lettuce, bacon and chicken on each tortilla and drizzle with dressing. Roll tortillas to create 4 wraps. Serve immediately.
