4 Chicken breasts
2 Tbsps lemon juice
250 milliliters Apple juice
1 small Pineapple
1 size onion
Bell pepper (1 red and yellow)
salt
peppers (from the mill)
2 Tbsps clarified butter
4 Tbsps breadcrumbs
½ tsp Curry
2 Tbsps Crème fraiche
1 Tbsp Whipped cream
5 Tbsps Emmentaler cheese (finely grated)
scallions (to sprinkle)

Preparation steps

1.

Stir lemon and apple juice, add chicken breasts and marinate about 1 hour.

2.

Peel pineapple thoroughly, quarter, cut out stalk and cut into small pieces.

3.

Rinse bell peppers, trim, cut in half, remove seeds and chop.

4.

Peel onion in half lengthwise and cut into wedges.

5.

Take chicken breast fillets from marinade, pat dry, season with salt and pepper and fry in hot butter on each side approximately 2 minutes, then remove.

6.

Add pineapple, onions and bell peppers into the frying butter, fry, season with salt and pepper, place in a greased baking dish and place the meat on it.

7.

Mix breadcrumbs with cream fraiche, cheese, cream, curry powder, salt and pepper and spread on the meat.

8.

Coat with 1 cup of marinade and bake in a preheated oven (200°C, approximately 400°F) for about 20 minutes..

9.

Serve with spinkled chives.
