Preparation steps

1.

Trim, rinse and cut the white and light green leeks diagonally into thin strips. Cut apples into quarters, peel, cut out cores, and cut crosswise into thin slices.

Salt and pepper chicken fillets and and fry on each side about 5-6 minutes until golden brown in a large skillet in 1 tablespoon oil and 1 tablespoon butter over medium heat. Meanwhile sauté leeks and apples in remaining butter, salt, pepper and nutmeg. Leave chicken to simmer in broth for 2-3 minutes over low heat and serve with leeks and apple.
