- 4 Chicken breasts
- 8 slices Whole grain cracker
- salt
- peppers (ground)
- 3 Tbsps vegetable oil
- 2 Tbsps Pastry flour
- 2 eggs
- 3 red paprika (bell)
- 3 yellow paprika (bell)
- 1 onion
- 3 Tbsps olive oil
- ground paprika (sweet)
- 2 tsps thyme
Preparation steps

Finely shred crackers in a food processor. Season chicken breasts with salt and pepper and coat in succession in flour, egg and cracker crumbs. Heat oil in a pan and fry the breaded chicken breasts on each side for about 5 minutes, until golden brown.

Peel onion and finely chop. Rinse peppers, cut in half, remove seeds and ribs, and coarsely chop. Heat the olive oil in a pan and cook the onions until soft. Add peppers, cook for a short time and season to taste with salt, pepper, paprika and thyme. Serve the chicken breasts on the peppers.
