Preparation steps

For the chicken marinade, peel the garlic and finely chop. Stir in the olive oil, lemon juice and soy sauce. Season with pepper. Rinse chicken breasts, pat dry and cut horizontally along the long side so that you can unfold the fillets. Sprinkle the chicken with marinade inside and out. Let stand at least 30 minutes.

For the filling, trim the broccoli, rinse and cut into florets. Cut the florets in half lengthwise and cook in plenty of boiling salted water for 2-4 minutes until crisp-tender, drain in a colander, rinse thoroughly with cold water and drain.

Unfold the chicken and spread the broccoli on the lower half. Season with salt, pepper and cayenne pepper. Place the cheese slices on top and fold the chicken over. Sprinkle with salt and pepper and cook on an oiled grill for 20-25 minutes, turning once.

Alternative method: Preheat the broiler, place the chicken on an oiled broiler rack on a baking sheet. Broil in the oven on the middle rack 20 minutes, turning once.

To serve, rinse the cilantro and shake dry. Chop the leaves and sprinkle over the grilled chicken breasts.
