- For the chicken
- 4 Chicken breasts
- salt
- freshly ground peppers
- 1 Tbsp vegetable oil
- 1 tsp butter
- 4 Sage
- 1 lemon
- For the lemon sauce
- juiced lemons
- 2 tsps grated Lemon peel
- 2 egg yolks
- 125 grams butter
- 150 grams Sour cream
- 8 Sage
- salt
- freshly ground peppers
- Sage (for garnishing)
- lemons (for garnishing)
Preparation steps

For the lemon sauce: whisk lemon juice with egg yolks over hot water bath until frothy with an immersion blender. Gradually add melted butter and whisk until creamy. Season with salt and pepper, add lemon zest. Rinse sage leaves, chop finely and add to the sauce. Add sour cream and mix well, keep sauce warm.

For the chicken: rinse and pat dry chicken fillets, season with salt and pepper. Heat butter in a pan and cook chicken for about 8 minutes, turning.

Arrange chicken and sauce on plates and garnish with sage and lemon slices. Serve.
