- 4 small, skinless Chicken breasts
- 2 Tbsps sunflower oil
- 2 heads Iceberg lettuce
- 2 large carrots (peeled and cut into thin batons)
- 1 large Cucumber (peeled, seeded and cut into thin batons)
- ½ cup low-fat Mayonnaise (to serve)
- salt
- freshly ground Black pepper
Preparation steps

Preheat the grill to hot. Brush the chicken breasts with the sunflower oil and season with salt and pepper.

Arrange on a grilling tray and grill for 16 - 18 minutes, turning, occasionally, until golden all over and cooked through.

Remove the chicken from the grill and leave to cool. Once cool enough to handle, cut into strips.
4.
Separate the large outer leaves from the lettuce and lay flat on a chopping board. Arrange the chicken, carrot, and cucumber in small piles, and then roll the lettuce around them securely.
5.
Trim the rolls with a knife if necessary before serving with pots of the mayonnaise.
