- 2 Chicken breasts
- salt
- freshly ground peppers
- 2 Tbsps vegetable oil
- ½ Cucumber
- ½ bunch scallions
- 1 bunch Arugula
- 4 Wheat tortillas (from a package)
- 4 Tbsps Mayonnaise
- 4 Tbsps green Ketchup
Preparation steps
Season chicken breasts with salt and pepper. Heat oil in a pan and cook chicken for about 10 minutes until golden brown on all sides. Remove chicken from pan and let cool slightly and cut into thin strips about 8 cm (approximately 3 inches) long.
Peel cucumber and cut in half lengthwise and scrape out seeds with a small spoon and cut into long, thin strips about 8 cm (approximately 3 inches) long. Rinse scallions and shake dry and cut into thin strips about 8 cm (approximately 3 inches) long.
Rinse arugula and spin dry.
Warm tortillas in preheated oven at 180°C (approximately 350°F) for a few minutes. Remove from oven and cut in half and spread with mayonnaise. Arrange cucumber, scallion, arugula and chicken and roll up and garnish each wrap with a dollop of green ketchup. Serve immediately.
