500 grams Chicken breasts (without skin)
1 onion
2 garlic cloves
1 green chili pepper
2 green Bell pepper
250 grams Okra
1 Tbsp vegetable oil
4 Tbsps Tomato paste
400 grams crushed Tomatoes (canned)
500 milliliters Chicken broth
1 tsp dried thyme
½ tsp dried oregano
1 tsp ground Cumin
½ tsp cayenne pepper
2 sprigs Sage
1 pinch sugar
salt
freshly ground peppers

Preparation steps

Rinse the meat, pat dry and cut into bite-sized pieces. Peel onion and garlic, dice the onion finely and cut the garlic into thin slices. Rinse chile pepper, remove seeds and cut into thin rings. Rinse bell peppers, trim and chop. Rinse the okra and drain.

Heat the oil in a wide saucepan, add onions and sauté until slightly soft. Then take out of pan, add the meat and cook until lightly browned. Add garlic and cook briefly. Return the onions to the pan, add bell peppers, chile pepper and okra. Pour in tomatoes and the broth. Add thyme, oregano, cumin and cayenne. Bring to a boil, then simmer for about 40 minutes over low heat.

Rinse the sage, shake dry, set some aside for garnish and cut the rest into strips.

Season gumbo with cayenne, sugar, salt and pepper to taste. Serve sprinkled with sage. Serve with fresh white bread, if desired.
