- 2 Chicken breasts (each 140 grams)
- 400 milliliters Chicken broth
- 2 scallions (only white portion)
- 150 grams Pickled cucumber
- 200 grams Beets sliced (from a jar)
- 100 grams Iceberg lettuce
- 1 Whole-grain baguette
- 100 grams cream cheese (light)
- salt
- peppers
Preparation steps
Rinse chicken breasts and pat dry with paper towel. Bring chicken broth to a boil in a pot. Add chicken, bring to a boil again, cover and simmer over low heat for about 10 minutes until done. Then remove from the heat and allow chicken to cool in the broth.
In the meantime, rinse scallions, trim and cut into rings. Drain pickles and cut lengthwise into slices. Drain beets and pat dry with paper towel. Rinse lettuce, trim, spin dry and tear into small pieces.
Divide baguette into 4 equal large pieces and cut each piece horizontally. Push apart and sprinkle cut surfaces with cheese and season with salt and pepper. Remove chicken breasts from the broth, drain on paper towel and cut diagonally into slices.
Arrange lettuce, chicken breast, beets, cucumber and scallions on baguette pieces. Serve on plates.
