10 sprigs thyme

3 Tbsps olive oil
250 milliliters white wine
4 organic lemons

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse the chicken, pat dry, and cut into eight pieces. Remove the leaves from two sprigs of thyme, and place the leaves under the skin of the chicken. Season with salt and pepper, then brown on all sides in a roasting pan with the oil. Add the white wine. Rinse and quarter the lemons, then add to the pan with the remaining thyme. Cook in the oven for 30 minutes. Alternatively you could braise the chicken with liquid.
