300 grams Rice noodles
1 small red Bell pepper
1 carrot
1 smaller Zucchini
½ bunch mint
Lime zest (for garnish)

Preparation steps

Whisk together the lime juice, fish sauce and sugar. Set aside 2 tablespoons of the marinade and brush the chicken breasts with the remaining marinade. Let stand for 30 minutes, turning occasionally. Rinse peppers, halve, remove seeds and white ribs and dice finely. Heat the sesame oil in a skillet, lift the chicken from the marinade and saute until cooked through, about 5 minutes per side. Cook pasta in plenty of boiling salted water until al dente, pour into a colander and drain well. Peel carrots, rinse zucchini, cut both on the vegetable slicer or by hand into long thin strips. Pluck the leaves from the mint.

In a bowl, whisk together the vegetable oil and lime juice. Add the noodles, carrots and zucchini strips and the mint leaves and toss well. Place the noodles on a platter.  Cut chicken crosswise into wide strips, arrange on the pasta, sprinkle with reserved marinade. Sprinkle with diced peppers and serve garnished with lime zest.
