50 grams dried Morel
1 onion
1 garlic clove
1 chicken (1.2 kg)

1 Tbsp clarified butter
150 milliliters dry white wine
100 grams Crème fraiche
2 Tbsps freshly chopped parsley (for garnish)

Preparation steps

Soak mushrooms in a bowl with about 250 ml (approximately 8 ounces) of water for approximately 30 minutes. Then pour through a sieve, reserve mushrooms and pour soaking liquid through a fine cloth (or coffee filter) filter. Reserve soaking water. rinse mushrooms and drain.

Peel onion and garlic and finely chop.

Rinse chicken, pat dry and cut into 8 pieces and season with salt and pepper. Coat chicken with flour and tap off excess flour. Melt butter in a pan and fry chicken on all sides until golden brown. Remove chicken from pan and set aside. Fry onion with garlic in the pan until golden brown. Deglaze the pan with wine and mushroom soaking water. Place chicken pieces in the sauce, cover and simmer over low heat for about 25 minutes. Add more water if needed. Add mushrooms during the last 10 minutes of cooking time.

Stir and season taste. Add crème fraîche and mix well. Serve garnished with parsley.
