- ¼ cup Bulgur
- 4 cherry Tomatoes (halved)
- ¼ Red onion (thinly sliced)
- ½ Tbsp chopped mint
- 4 black Olives (pitted and sliced)
- 0.333 cup canned chickpeas (garbanzo beans)
- 1 handful salad
- 2 Tbsps Feta
- For the dressing
- 1 clove garlic cloves (crushed)
- 1 Tbsp lemon juice
- 2 Tbsps extra virgin olive oil
- salt
- freshly ground Black pepper
- To garnish
- 1 slice lemons
Preparation steps

Soak the bulgur wheat in warm water for 10-15 minutes to swell before putting it into a sieve to drain.

For the dressing: whisk all the ingredients together until thickened.

Mix the bulgur with the tomatoes, onion, mint, olives and chickpeas and toss the salad with the dressing.
4.
Arrange the salad leaves on a plate and spoon the bulgur salad on top. Crumble over the feta and garnish with lemon.
