200 grams peeled almonds
200 milliliters mild olive oil
2 tsps white balsamic vinegar
2 tsps sherry (semi-dry)
1 tsp salt
Saffron (for garnish)

Preparation steps

1.

Toast the planed almonds in a dry pan. Peel the garlic and chop. Puree in blender together with peeled almonds, olive oil, vinegar and sherry, season with salt and pepper.

While pureeing add 350 ml (1 1/2 cups) cold water in a thin stream. Chill until ready to serve. Pour into cups and garnish with saffron threads and flat parsley.
