500 grams seedless, white Grape
1 Cucumber
1 shallot
2 garlic cloves (chopped)
500 grams Yogurt (0.1% fat)
1 generous pinch salt
white peppers
50 grams peeled almonds
2 Tbsps roasted slivered almonds

Preparation steps

1.

Rinse and halve grapes, set aside 3-4 tablespoons for garnishing. Place the rest in a blender.

Peel cucumber, halve and remove seeds, chop coarsely. Peel shallot and garlic, chop coarsely. Add to grapes and puree finely. Strain through a fine sieve and remove all solid pieces.

3.

Combine with peeled almonds and yogurt and puree again. Season with salt and pepper. Place into bowls and garnish with flaked almonds and grapes. Serve chilled.
