9 ozs mie noodles
1 clove garlic cloves (peeled and chopped)
1 ⅔ cups Coconut milk
2 Tbsps soy sauce
cayenne pepper
3 eggs
oz dried Wood Ear Mushrooms (mu err)
7 ozs Snow peas (rinsed and halved)
2 carrots (peeled and pared into very thin slices with a peeler)
4 scallions (rinsed, cleaned and chopped into rings)
1 red Bell pepper (rinsed, halved, cleaned, deseeded, membrane removed, finely sliced)
2 Tbsps freshly chopped cilantro
3 Tbsps butter
2 Tbsps breadcrumbs

Preparation steps

1.
Heat the oven to 200°C conventional / 180°C fan assisted / 400°F / gas 6.
2.
Cook the noodles according to package instructions, refresh and drain.

Mix together the garlic and coconut milk, season to taste with soy sauce and cayenne pepper and stir in the eggs.
4.
Drain the mushrooms, pat dry and chop into fine slices.
5.
Heat 1 tbsp of butter in a skillet and fry the snow peas with 2-3 tbsp of water for 2-3 minutes. Add the carrots and fry for a further 2 minutes.
6.
Stir in the scallions, peppers, mushrooms and herbs and season with soy sauce.
7.
Place the noodles into a greased, ovenproof dish and spread the vegetable mixture on top.
8.
Pour over the coconut sauce, sprinkle the top with breadcrumbs, dot with the remaining butter and bake for around 20 minutes.
