600 milliliters Vegetable broth
2 Tbsps apple cider vinegar

300 milliliters Kefir
½ Cucumber
200 grams Radish

Preparation steps

Peel the beets and dice. Set the leaves aside. Bring the beets, stock and vinegar to a simmer and cook for about 30 minutes. Purée and season with salt and pepper. Let cool and then chill in the refrigerator.

Stir in the kefir and season with salt and pepper. Rinse the cucumber, peel, quarter lengthwise and cut into thin slices. Rinse the radishes, trim and thinly slice. Distribute the soup among serving bowls, top with cucumber and radishes, season with salt and pepper and serve garnished with dill.
