1 tsp vanilla extract
1 cup dairy-free Dark chocolate (chopped)
1 Orange
1 cup Raspberries (to serve)

Preparation steps

1.
Carefully open the can of coconut milk and spoon the thick cream into a mixing bowl, discarding the water.
2.
Beat with the vanilla extract until thick. Meanwhile, melt the chocolate in a heatproof bowl set atop a half-filled saucepan of simmering water, stirring occasionally.
3.
Beat the melted chocolate into the coconut cream and then divide the mixture between four serving ramekins.
4.
Cover and chill for 2 hours.
5.
When ready to serve, grate over fresh orange zest and serve with raspberries.
