1 egg
80 milliliters vegetable oil
250 grams Natural yogurt
6 Tbsps liquid honey
250 grams Pastry flour
2 tsps Baking powder
1 tsp freshly grated ginger
1 ½ tsps Gingerbread spice
1 ½ Tbsps Cocoa
For topping
100 grams dark Chocolate
125 grams candied ginger
powdered sugar (for dusting)

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Line a muffin pan with paper cases.

For the batter, mix the egg with the oil, the yogurt and honey in a bowl. Mix the flour with the baking powder, ginger, spices and cocoa. Add the flour mixture to the egg mixture and continue stirring until the dry ingredients are moist. Pour mixture into prepared cups and bake in preheated oven for about 25 minutes.

Chop the chocolate coarsely and melt over a hot, not boiling water bath. Remove from heat and let cool to lukewarm.

Use a cookie cutter to cut small stars from the candied ginger.

Remove the finished baked muffins from the oven, allow to cool and remove from the pan. Drizzle half the muffins with the chocolate, decorate each with one candied ginger star and allow to dry. For the remaining muffins, dust with powdered sugar and decorate each with one candied ginger star.
